Our debut ‘Left of Centre’ release harks back to French traditions in the form of an Apple Eau De Vie, capturing the very essence of Adelaide Hills apples with collaborator Professor Graham Jones.

Made by distilling The Hills Cider Company’s Apple Cider, which is handcrafted using 100% fresh Adelaide Hill apples, at the University of Adelaide’s old copper bandy still. It was originally commissioned by our Head Distiller Sacha La Forgia’s now retired Professor, Graham Jones.
Supply of the Virgin Apple Spirit is limited as most of our spirt has made it's way into barrel since starting the program. Expect to see 2 Year Old Apple Brandy soon ...
Graham is a genius and is passionate about all things alcoholic, especially cider; who has his own cider company on Kangaroo Island and his very own apple orchard in which he has planted many heritage apple varieties.
Double pot distilled in the traditional method it shows fantastic apple, custard apple and a hint of cured meat on the nose. The palate is velvety smooth with masses of apple character and incredible palate length - a testament to the quality of the original cider.
We believe that experimentation is the spice of life. Without the ability to push the boundaries of what we know, drinking would be boring. This series is dedicated to those that break the mold and stand a bit left of centre.
Our Virgin Apple Spirit was awarded a Silver at the 2017 Australian Distilled Spirits Award, Bronze at the 2017 American Distilling Institute Awards & Bronze at the 2017 San Francisco World Spirits Competition.
